These Butterscotch bars are very delicious. They are chewy, gooey and just heavenly. Finger-lickin’ good! One of our guest, Imelda shared her recipe here in one of my page and I thought of making it and create a new blog post about it.After slicing the bars, a quarter is already gone!
To prepare, you will have to combine, melted butter, brown sugar and glucose syrup which is a very thick transparent syrup that makes the butterscotch really chewy. You can make it from scratch and can find recipes on the internet or can purchase a ready made one.
After combining butter, sugar and syrup. Add the vanilla. Then add the eggs, one at a time and continue beating for about 8-10 minutes or more. The longer you beat, the more chewy it will become. You want the glucose syrup to be mixed thoroughly with the rest of the ingredients.
Make sure to rest the mixer in between to avoid overheating. Some hand mixers are not capable of running for a long period of time especially when the mixture is thick. My Kitchen Aid 5 speed ultra power hand mixer has never let me down. I have used countless times and I love it everything about it. Now, combine all purpose flour, baking soda and baking powder. Sift then add to the mixture initially prepared then add the cashew nuts. Transfer to a pan lined with greased parchment paper and bake for 30-40 minutes. Let it cool and cut into bars.
